A Taste of History: Civil War
. Participants include American Steakhouse, Ash Creek Saloon, Bacchus, Barcelona, B.J. Ryan's, Dry Dock, Hummel Brothers, Jeff's Cuisine, New York Bakery, O'Neill's, Sweet Ashley’s and Nick's Pizza. The winners will be chosen by attendees during the event on Saturday, June 11, at Mill Hill Historic Park, 2 East Wall Street. Between 11:00 a.m. and 4:00 p.m., attendees will purchase ballots and sample dishes prepared by the participants, then vote for their favorites.During the event, attendees can visit a Civil War encampment to see demonstrations and talk with re-enactors from Company A of the 11th Regiment Connecticut Volunteer Infantry. Displays will focus on Civil War cooking, weapons and the life of soldiers. Attendees at A Taste of History also can explore an exhibition of quilts from before the Civil War to the present organized by the Historical Society as part of the six-month Norwalk Quilt Trail. In addition, WEBE-108 will broadcast live from the event.
A Taste of History: Civil War is presented by the Norwalk Historical Society as a fund-raiser for restoration of the Civil War Soldiers Monument in Riverside Cemetery. The statue was erected in 1889 by Buckingham Post No. 12 of the Grand Army of the Republic, an organization made up of Union Army veterans, to serve as a memorial for more than 32 Civil War soldiers whose families could not afford a 'proper' burial. Over the years, this monument has deteriorated and the zinc Civil War soldier was pulled the off its granite base in 2002. Currently, the pieces of the statue are on display at the Norwalk Historical Society Town House at Mill Hill.
As one of its projects in honor of the Sesquicentennial of the beginning of the Civil War, the Norwalk Historical Society has mounted a campaign to repair the statue, christened “Chester,” and return it to its rightful place. Through a grant from the Historic Preservation division of the Connecticut Commission on Culture & Tourism, monuments conservator Francis Miller of ConservArt, Inc. is preparing a treatment report that will outline the steps needed to restore the monument.

All Class III and Class IV Food Service Establishments Must Have A Grease Trap/Interceptor Installed By July 1, 2011Restaurant and other Food Establishment owners in Connecticut face a July 1, 2011 deadline to have a grease trap or, grease interceptor installed on the sewer line or, face penalties under a Connecticut law which was passed in 2005. The General Permit for the Discharge of Wastewater Associated With Food Preparation Establishments issued under Section 22a-430b of the Connecticut General Statutes require that all Food Preparation Establishments install a grease trap by July 1, 2011.
“Food preparation establishment” means a Class III and IV food service establishment as defined by Section 19-13-B42 of the State of Connecticut Public Health Code or any other facility discharging fats, oil, and grease above the effluent limits in Section 5(c)(2) of this general permit such as but not limited to restaurants, hotel kitchens, hospital kitchens, school kitchens, bars, factory cafeterias, retail bakeries and clubs.

The Grease Trap or, Grease interceptor is designed to separate Fats, Oils, & Grease from the waste stream, also referred to as FOG. When FOG is allowed to flow into a sewer there is a greatly increased chance of the Fats, Oils, & Grease forming deposits in the sewer which will build up and cause blockages. Blockages caused by FOG is one of the leading causes of sewers backing up and discharging above ground causing pollution. A properly installed grease trap or, grease interceptor will separate FOG from the waste stream and hold it within the trap or, interceptor until the unit is serviced where the trap is then pumped out and the non-renderable fats, oils, & grease are removed for disposal at a licensed facility. Non-renderable fats, oils, & grease cannot be disposed of in sanitary sewers, dumpsters, & storm drains you must hire a grease trap/interceptor cleaner and maintain records of cleanings in accordance with your discharge permit.
